Weigh ingredients when you can. It makes odd factors like 1.27 easy.
Scaling a recipe means multiplying every ingredient by the same number. From 4 servings to 6, multiply by 1.5. Moving from a 20 cm round pan to a 23 cm round pan needs about 1.27 times the batter, because the area grows with the square of the width.

Frequently Asked Questions
No question matches that search.
How do I scale a recipe?
Divide the servings you want by the servings in the recipe, and multiply every ingredient by the result.
How do I convert a recipe to a different pan size?
Divide the area of the new pan by the area of the old one, and multiply the ingredients by that.
Does baking time change when I double a recipe?
Yes, if the batter is deeper. In two pans of the same size, the time stays about the same.
Should I change the oven temperature?
Usually not. Change the time instead.
How do I halve an egg?
Beat it and use about twenty-five grams.
Can I scale salt and spices exactly?
Scale them a little less, then taste and add more.
How much bigger is a nine inch pan than an eight inch?
About twenty-seven per cent bigger in area.
Any batch, same result
Scale by servings or by pan, round sensibly and keep an eye on the oven, and the recipe works at any size.
